Our Story

In 2018, Distillery Lokál was established in Dili, Timor-Leste, to highlight and explore the country's flavours and biodiversity through beverages. The distillery serves as an interlocutor between people, place and taste. We do this through the production of drinks that contain native produce and draw inspiration from traditional flavours and practices.

Our primary products are seasonal fruit ciders, wild ferment meads, bark-based vermouths, distilled spirits, liqueurs and bottled cocktails.

Our production focuses on sustainability and seasonality.

All fruit off-cuts and fermentation by-products are composted and distributed to farmers in the coffee industry. We support harvesters of fermentable produce with equipment and training towards encouraging more sustainable practices. We work with Timorese artists to design and produce bottle labels.

The availability of our products shifts with the seasons.
